Fall Salad

I love a big hearty arugula salad and this one is full of color and flavor! I whipped this recipe together for the first time for our neighborhood fall festival this year and it has quickly become a favorite of mine around the house. Enjoy!


Ingredients:

  • Arugula

  • Cubed Pears or Apples

  • Pomegranates

  • Shredded Cheddar or Goat Cheese Crumbles

  • Candied Walnuts or Pecans

  • Cubed Cooked Sweet Potatoes

  • Champagne Vinaigrette Dressing


Fun fact about me — I LOVE arugula! If I see it on a menu, I order it. I pile it on top of my pizza and even ate bowls of it for breakfast when pregnant. It’s a healthy love affair!


Quick Tips:

  • If making a large bowl for a party, toss only the apples and pomegranates in the champagne vinaigrette dressing before adding to the salad. If eating right away, toss the entire salad in the dressing before enjoying.

  • You can sub the arugula for other lettuce but why would you because arugula is the BEST!

  • Apples can we swapped for pears and if you don't feel like the messy act of plucking pomegranate seeds, I suggest swapping for blueberries or dried cranberries.

  • And candied pecans so have a lot of sugar so if you are looking for something less sweet, you could go with regular pecans or walnuts.

  • Add grilled chicken or blackened shrimp if you want to add protein.

  • I love the contrast of food on black dish ware!
