Watermelon Three Ways.

Two kid activities and a refreshing cocktail for mom!

Watermelon does not last long in our house during the summer months. In fact, I joke the boys and I could polish one off in a day!


Because watermelon is such a family favorite, I thought up three ways to use a single melon that would burn some time with the kids in the kitchen and create a few yummy treats, including a cocktail for me!





Treat #1 - Watermelon Cutouts

I purchased a set of nine mini-cutters from Amazon that included hearts, stars, bears, flowers and a few more. After removing the rind of our watermelon, (check out this video for the BEST way - game changer) I then sliced into thin pieces for the kids and I to use our mini cutters. While the boys immediately ate their tiny treats, I cut a bunch of star shapes and added blueberries for a patriotic bowl of goodness!


Treat #2 - Watermelon | Lime | Cucumber Popsicles

We blended and strained the remaining watermelon adding to the mix, a peeled English cucumber and two limes. While we have a juicer, I found it does not remove the grit and makes a bigger mess so we used our Vitamix Blender. Be sure to strain the lime and cucumber too. We then took a funnel and poured the juice into a dozen Zipzicle popsicle sleeves and into the freezer they went to enjoy later!

Treat #3 - Watermelon Cooler Cocktail

Clearly after the messy effort of straining the juice, I was going to leave some for a refreshing cocktail for myself! So I simply added a little bit of sugar and a healthy pour of Square One Cucumber Vodka to the juice, tossed shaker with ice and garnished with a slice of lime and a watermelon star. Cheers!
